Momo is the national comfort food of Nepal: a thin wheat wrapper pleated by hand around a seasoned filling, then steamed or fried. We pleat every one in house and serve them with our own tomato-sesame achar. If you have only ever had a steamed momo, order the jhol momo — the dumplings arrive sitting in a warm, nutty sesame-tomato broth you drink from the bowl.

Dum means the pot is sealed and finished over low heat, so the rice steams in the aromatics instead of boiling in them. We cook ours Hyderabadi style: long-grain basmati layered with marinated meat, saffron, fried onion and whole spice, then left to finish undisturbed. Every biryani is made to order, so give us a few extra minutes and tell us your heat level.

The heart of a Nepali kitchen. Goat is cooked bone-in and slow — the bone is where the flavour lives, so expect to work at it a little; that is how it is meant to be eaten. Our Nepali-style goat curry (khasi ko masu) is built on mustard oil, ginger, garlic and timur-forward spicing rather than cream, which is what makes it taste different from the Indian-style preparations next to it on this page.

Vegetarian food is not an afterthought in Nepali or Indian cooking — daal is the everyday centre of the plate, not a side. Paneer is fresh pressed cheese that holds its shape in the pan, so it takes on a sauce without dissolving. Several dishes here are vegan or can be made vegan; ask when you order and we will tell you honestly which ones.

The same curry bases as the rest of the kitchen, built around shrimp and salmon instead of meat. Seafood cooks fast, so these go into the sauce at the end rather than simmering in it — the shrimp stay firm and the salmon holds together. Every one is available mild through hot; the vindaloo is the one with real heat.

Chow mein arrived in Nepal by way of Tibet and China and became genuinely Nepali on the way — wok-tossed hot and fast, with more spice than you would expect. Thukpa is the Himalayan answer to a cold day: hand-pulled-style noodles in a long-simmered broth. And the thali set is the whole meal on one tray — rice, daal, a curry, vegetable and pickle, the way it is eaten at home.

Naan is baked to order, which is the only way it is worth eating — soft and blistered, brushed while it is still hot. Order one per person if there is curry on the table; the bread is the utensil.
