Chow mein arrived in Nepal by way of Tibet and China and became genuinely Nepali on the way — wok-tossed hot and fast, with more spice than you would expect. Thukpa is the Himalayan answer to a cold day: hand-pulled-style noodles in a long-simmered broth. And the thali set is the whole meal on one tray — rice, daal, a curry, vegetable and pickle, the way it is eaten at home.
